Breakfast for the week is so much easier with these Egg & Cheese Breakfast Nests. I make these on Sunday evening, keep the cooked nests in a sealed container in the refrigerator and pop them in the microwave for less than a minute and it like you just baked them. You can add bacon, sausage or any left over meat. I’ve made these dozens of times for our office potluck food day using the smaller muffin tin trays and they’re always the first to go. (Who doesn’t love cheese and bacon) And the whole batch costs less than $10.

Here’s the ingredients. No additional salt or pepper needed because of the flavored Egg Beaters.

Pre-heat oven to 425.

Use non-stick spray in muffin tin.
Breakfast Nests Egg & Cheese
Use 1/2 package of grated potatoes, any choice meat and a cup of cheese. You’ll need another 1/2 cup cheese later for the topping.

Mix together and put in tins. Use your finger to hollow center (like a bird’s nest).

Put in oven for 15 minutes.

Take out once you have toasty ends & edges.

Fill with egg beaters. One small carton filled 6 large muffins.

Top with more cheese. For me, the more the better.

Reduce oven heat to 350.

Back in oven for another 15-20 minutes.

Let cool before putting in a sealed container in the fridge.

In the morning, just microwave one for less than a minute.
